Sweet Pepper Pimento Stuffed Mushrooms
Mushrooms (Stems Removed)
Sweet Assorted Peppers
To start, put foil on the bottom of a cookie sheet. Add a couple pats of butter, enough to keep the base of the mushrooms moist, while roasting in the oven.
Set aside and prepare your peppers and tomatoes. Dice into small bits.
Shred your mozzarella…
Then…the fun part! Gently (the mushrooms will break if pressed) add a small amount of peppers and tomato…again…GENTLY press into the center. Sprinkle with mozzarella, top with pimento.
Go ahead and add a little season salt. I used steak rub and a touch of kosher salt….
Bake at 370~ for 10 minutes..NO MORE!
As always, feel free to tweak. Black baby olives would be rather tasty as toppers!
