Fresh Garden Herbs: Spaghetti and Meatballs

There’s nothing like growing your own spaghetti sauce. The only thing I couldn’t grow, was the noodles. And trust me, if we were in a rural area, I’d probably try my hand at wheat. But this is suburbia….so the veggies and herbs, will have to do.

And of course, I found another way to add flax to the children’s diet. Toss it in the sauce. It’s so much easier than asking, “So…will you kids be having a side of flax with that?”

Honestly, and I’ve said this before, buy a coffee grinder. You can sneak flax into ANYTHING! Seriously!

Tomatoes, Oregano, Basil, Garlic, Flax….a little of this….a little of that….mmmmmmmmm

Strange that a ‘small thing’ like an herb garden, could bring so much joy.

Having tried the whole grain spaghetti noodles, and the kids throwing an all out boycott….I decided to sneak it in and go half and half. (And sneaking things in, allows me to forgive the fact that nobody bothered to take out the garbage this week…I feel zero guilt).

And the meatballs….oh, the meatballs. A little breading, some more oregano, garlic and basil……

At least for today, the kids are full….the mess is cleaned up….and well…..at least for today, I took time to appreciate the small things.
